For those who are not familiar, an Irish Car Bomb is a “cocktail” made by dropping a bomb shot of Irish cream and Irish whiskey into a glass of Irish stout. The drink is then meant to be chugged before the cream inevitably curdles.
While I am not a fan of this festive drink I do love the riff of this beverage played out in cupcake form. As a cupcake you use the Irish stout in the cake batter, Irish whisky in a rich chocolate ganache found at the center of the cupcake, and Irish cream in the cupcakes frosting.
I used shiny green cupcake liners and topped the cupcakes with festive St Patricks Day sprinkles.
